Always save your fruit salad for dessert? This melon combo makes a refreshing first course or side for grilled chicken or fish. Best of all, it's comforting way to tuck away vitamins — without vegetables.
2 tablespoons white grape juice concentrate, Splenda, honey, brown sugar or another sweetener
½ tablespoon minced peeled fresh ginger
½ tablespoon chopped fresh mint
½ teaspoon grated lime zest
2 tablespoons fresh lime juice
1 cup 1-inch watermelon cubes
1 cup 1-inch cantaloupe cubes
- Place the grape juice concentrate, ginger, mint, lime zest and lime juice in a small bowl and stir to mix.
- Place the watermelon and cantaloupe cubes in a large salad bowl, pour the lime and ginger mixture over them and toss to coat evenly. Cover the salad and refrigerate for at least 1 hour before serving

Tip: For a tangier salad, substitute orange or pineapple juice concentrate for the white grape concentrate. For calcium, toss in or top with ½ cup pasteurized feta or goat cheese.
