Salmon’s rich taste stands up beautifully to this flavorful mustard coating. But don’t shy away from trying this crust on a milder fish, like halibut. For that matter, try it on chicken breasts too!

Olive oil cooking spray
2 skinless salmon fillets (each about 6 ounces)
Salt and black pepper
1 ½ tablespoons grainy mustard
2 teaspoons mayonnaise
2 teaspoons chopped fresh dill, or ½ teaspoon dried dill.

  1. Preheat the oven to 375 F
  2. Coat the bottom of an 8-inch-square baking dish with olive oil cooking spray. Place the salmon fillets in the baking dish and lightly season them with salt and pepper.
  3. Place the mustard, mayonnaise and dill in a small bowl and stir to mix.
  4. Spread the mustard mixture on the salmon fillets.
  5. Bake the salmon until it is cooked through and flakes easily when pierced with a fork, about 10 minutes

Serves 2

Tip: For a sweet-and-pungent taste, skip the dill and add 2 teaspoons fruit-only apricot preserves to the mustard mixture in the crust.
