Just what your inner child (and your baby) has been clamoring for:sweet, chunky, chewy cookies chock-full of raisins, nuts, andchocolate. Take a few along next time you hit the trail (or theshopping mall, or the office) - and don't forget to dunk one beforebed!

Ingredients

  • 2 cups old-fashioned oats
  • ¼ cup wheat germ
  • ¼ cup ground flaxseed
  • ½ cup shredded coconut (preferably unsweetened)
  • 6 Tbsp (¾ stick) butter, melted
  • ¾ cup white grape juice concentrate
  • 1 large egg
  • 1 cup raisins
  • ½ cup chopped walnuts
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. In large bowl, combine oats, wheat germ, flaxseed, and coconut. Stir in butter until combined.
  3. In bowl of food processor, combine juice concentrate, egg, and raisins; process until raisins are chopped. Add raisin mixture to oat mixture; stir until blended. Fold in nuts and chocolate chips.
  4. Drop cookies by tablespoonfuls, about 1 inch apart, onto nonstick cookie sheets; flatten with back of fork so they form irregular circles.
  5. Bake about 20 minutes, until golden and firm. Let cool completely. Store in an airtight container for up to 5 days or frozen for 1 month.
